A design-led rooftop bar at the Saint hotel in Oia, with a white terrace of low tables and rattan chairs looking straight out over the caldera and the sea, cocktails, champagne and sushi-leaning bites as the sun sets over the volcano. A drive north from Perissa, up in the caldera village. The bar sits on the upper floor of Saint Suites Oia, it calls itself Santorini's skyline haven, with sleek marble tables and contemporary, minimalist furniture facing what it describes as an unobstructed view of the caldera, the volcano and the endless Aegean. There are three menus: sushi, drinks built around premium spirits and signature cocktails, and shisha.
