Santorini's volcanic soil produces some of Greece's most distinctive wines, and a tasting at the wineries around Pyrgos is an easy half-day from Perissa. Try the crisp, mineral Assyrtiko and the sweet sun-dried Vinsanto from a terrace that looks straight out over the caldera, especially good as the sun drops.
